bread machine

I’ve just bought a bread-making machine , having given up for now on making bread by hand since mine never seemed to rise and I don’t like dense loaves. I’m sure the machine will add to my electricity bill , but I think it balances out with the benefits—there’s a lovely smell, less physical effort, and less mess. In the book, I noticed they use powdered milk , and after looking it up and speaking to someone, I found the only purpose is to prevent milk from sitting in the machine too long and going off. So I’ll skip the powdered milk and use fresh or flavored milk instead.  I wasn’t sure what the oil in the loaf does, but it helps the bread rise, and I suppose I could experiment with different types of oil . One annoying thing is that the paddle leaves a big hole in the bread, so I’ll need to figure out the right time to remove it, though it’s not that easy to take out.
